“Schiacciata con l’uva” – Schiacciata with red grapes

Schiacciata is a traditional Tuscan flatbread which can be topped or filled with sweet or savoury. Similar to Focaccia, it can be baked at different thicknesses, depending on personal or regional taste.

This sourdough version has autumnal red grapes and fennel seeds, as inspired by Victoria Osborne from Wraxall Read Bread, Wiltshire.
